S﻿panton Hospitality Group was founded by Hospitality industry veteran and founder of Australian Bartender magazine & Sydney Bar Week, Dave Spanton.In 2021 they revived Piccolo Bar, Sydney's oldest cafe (1952) and created an old school aperitivo bar and diner in Kings Cross.I﻿n 2023 they  opened Vermuteria in Potts Point, an Aperitif Wine Bar and Delicatessen serving sherry, classic cocktails and vermouth on tap and from our 100L barrels behind the bar plus host our "Tasting Series" where we host monthly masterclasses from leading drinks brands from around the world.

BAR HERNANDEZ TASTING SESSIONS 2026

On the first Wednesday of every month, we are hosting some casual and fun tasting sessions covering some of our favourite topics. Including the Drinks & Snacks of San Sebastian, Understanding Vermouth and a deep dive into Sherry.
