THE FUNDAMENTALS OF ROASTING:

THEORY AND PRACTICAL



The team at Maillard Atelier are excited to announce a brand new pathway for anyone looking to learn to roast coffee, or further their roasting knowledge. The Fundamentals of Roasting is an entry level coffee roasting class for those in the coffee industry that are wanting to take their career to the next level or coffee fanatics wanting to learn more.

Learn from some of Melbourne’s award winning head roasters! Ben Stronach from Tinman Roasters, Ciaran Ardern from The Vertue of the Coffee Drink and Commonfolk Coffee's Ryan Toleman and Tommy Terlaak. Students will take part in a 2 day coffee roasting intensive with two instructors per weekend.


BASIC COURSE OUTLINE INCLUDES:

  • Cupping for purchasing and selecting green coffee

  • Selecting an origin from the cupping

  • Roasting selected origin for desired application

  • Roast profiling; using software to maximize your roasting

  • Roast development; understanding roast events, RoR, development, airflow and gas controls

  • Post roast cupping

  • Roast analysis; filter and espresso profiles

  • Roasting procedures for production


The course is spread over two days to allow each student to observe one roast from the instructor, perform an assisted roast, and finally complete one roast individually. Students will also learn from each others roasting as they work together on the roasters.


IF YOU ARE A COFFEE PROFESSIONAL:

  • You will learn about production roasting and scheduling, how to make the most of your time and how to correctly organize a roast schedule

  • If you have previous roasting experience, you will learn from two experienced roasters, both owners/head roasters of successful roasting companies. They will be able to discuss any questions you have and explain their individual roasting style


YOU'LL BE PROVIDED WITH:

  • Our very own Maillard Atelier coffee roasting manual

  • The roasted coffee from your solo roasts (packaging provided)

  • Maillard Atelier's Fundamentals of Roasting Certificate upon completion

  • 2 hours of credit at Maillard Atelier to come back for a follow up roasting session


COURSE WILL RUN ON A SATURDAY AND SUNDAY FROM 8:00 AM TO 4:00 PM BOTH DAYS

  • If you are driving, there is plenty of parking onsite and street parking that is free

  • If you are arriving by public transport, Batman Station is a 10 minute walk away
