A delicate salmon mi cuit with baby beets, radish, and fresh greens leads into a refined second course of salt-baked celeriac with shaved pear, Long Paddock Banksia, crisp prosciutto, toasted hazelnuts, and maple verjus.

For the main course, choose between pan-seared snapper with prawn raviolo, bisque, and creamed leeks, or Cape Grim striploin with smoked potato foam and sauce bordelaise—both crafted to be indulgent yet unhurried. Finish with your choice of lemon meringue mille-feuille or a rich chocolate tart with beurre noisette and caramelised banana ice cream.

As an optional add-on, elevate the experience with the Romeo & Juliet cocktail pairing ($40 per couple).
