About this Event

Exceptional Dining Experience with Jowett Yu

Drysdale Centre of Excellence presents ‘Restaurant Tasmania’, held at the Launceston Drysdale Campus. Our final event of the series will feature the incredible chef Jowett Yu.

The ‘great’ chef will work alongside Drysdale students and teachers for an approximate period of three days in preparing and executing a series of degustation events to the public. The chef mentors and coaches students and cookery teachers in new techniques and food innovation.

Jowett Yu will brings his diverse culinary background and passion for Chinese flavours from his position as Executive Chef at Ho Lee Fook. Yu’s cooking style reflects his Taiwanese heritage and extensive time spent in Chinese communities around the globe. His distinct take on regional Chinese cuisine combines the familiar flavours of traditional dishes with premium local ingredients, modern techniques and refined aesthetic sensibilities.

The menu will be served in 2 styles, individual portions and some banquet style. Accompanied with Tasmanian Wines, from Bay of Fires.

Raw oyster, Tasmanian wakame, ginger and cucumber dressing

Southern rock lobster, Tasmanian sea urchin, finger lime, Tasmanian wasabi, kinome

Grilled Southern calamari salad, leek salsa, Thai basil, cherry tomatoes

Steamed striped trumpeter, asparagus, mussel, mussel dashi, green shallot oil

Robbin’s island wagyu, lemongrass pepper salsa, lime pepper vinaigrette

Grilled Flinder’s Island Lamb ribs, Xinjiang spices, parsley salad

Tasmanian abalone rice enriched with its liver, oyster mushroom

Condensed milk flan, Vietnamese coffee caramel
