Ever wondered how Italians make their own pickles and preserves?


Now’s your chance to roll up your sleeves in a fun, hands-on workshop in the heart of the Swan Valley, just a short drive northeast of Perth, WA.


Spend a few hours with me, meet like-minded food lovers, and discover how to pickle and preserve authentic Italian recipes from scratch, perfect for antipasto platters, sandwiches, pizzas, and more.


I’m Concetta Sultan, co-author of the Cugini in Cucina Cookbook and host of Concetta’s Italian Cooking Experiences. As part of my Seasonal Sicilian Cooking Series, I’ll teach you classic Sicilian pickling techniques using fresh, seasonal, local produce with no preservatives, creating the authentic flavours you remember from nonna’s kitchen.



SERIES II – ALL-NEW FAMILY RECIPES


This is Series II of my Italian pickling workshops: all-new family recipes, never taught before, including my father’s famous melanzane a Rondelle Sott’Olio, tender round slices of eggplant, preserved in fragrant olive oil with garlic and fresh herbs. Sun-kissed tomatoes bursting with flavour, naturally dried using traditional Sicilian methods to concentrate their sweetness, and vibrant peperoncini piccanti, freshly pickled chillies.


All are made with the best seasonal local produce and high-quality local olive oil, with no preservatives in sight. Together, we’ll craft the authentic flavours of Sicily that you can take home in your very own jars.



WHAT TO EXPECT ON THE DAY


Harvesting: Discover how to choose the freshest seasonal vegetables, ensuring your pickles are bursting with flavour, just as my ancestors did in Sicily.


Processing & Preserving: Roll up your sleeves and prepare a variety of vegetables using time-honoured family methods passed down through generations. In this Series II workshop, you’ll make melanzane a Rondelle Sott’Olio, sun-kissed tomatoes naturally dried using traditional Sicilian techniques, and vibrant peperoncini piccanti , all crafted with fresh local ingredients.


Savour the Flavours: Enjoy tasting your pickles alongside other traditional Sicilian favourites, perfectly paired with a beautiful glass of wine, in a relaxed Swan Valley setting.


Take Home Recipes: You’ll receive all the family recipes from the workshop, so you can recreate these authentic Sicilian pickles at home and share them with friends and family.


What to Bring: Your apron, a small chopping board, your favourite sharp knife, and a healthy appetite for tradition, culture, and authentic Italian flavours!

Masterful Guidance: Learn how to select the best seasonal produce, blend aromatic herbs and spices, and preserve your pickles using traditional Sicilian methods, time-honoured recipes now shared with you for the first time in Series II.


Photo Memories: Capture the day with a photo collage of your experience, a keepsake to remember this special hands-on journey into Sicilian pickling.

We’ll gather in the heart of the Swan Valley, a place I love for its beautiful surroundings, seasonal produce, and the welcoming spirit of the local families who bring it all to life. You’ll have time to wander, soak in the atmosphere, enjoy the sights and scents of fresh produce, and simply slow down while connecting with the flavours and traditions of this special region.
