Miso Making is fun and meditative at the same time. In this workshop you will make your own miso paste by using traditional Japanese tools : Ceramic Suribachi and wooden Surikogi, and take home your miso(about 1kg) to ferment further. Ingredients are all organic. You will make your miso with fresh Rice koji made by Yoko, (access to fresh koji is a rare opportunity!!)
You will learn about different type of miso, how they are made....and you will taste a variety of different miso pastes to appreciate the deep flavours from Cooking with Koji's organic Miso ranges (including soy free misos to flavoured misos) to understand more about Miso.
This is a very small class so you have enough chance to ask questions.
After making Miso paste, Yoko will prepare a Japanese degustation lunch for you to enjoy. This is Cooking with Koji's most popular workshop! It will be a memorable day :-)
