At Ruby Riviera, a riverside Mediterranean taberna located in South Wharf, Melbourne, we celebrate with food and love sharing experiences with our guests.


This Mother's Day we are offering a hands-on masterclass in which you can learn the art of making a Mediterranean coastal favourite and signature dish of Executive Chef Malcolm Williams - Ndunderi di Minori.


Whisk your kitchen-hero mum away this Mother's Day and take her on a vibrant journey to the Amalfi Coast without having to leave the city.

About Ndunderi:


Ndunderi is a type of pasta that comes from the Campania region of Italy, particularly associated with the town of Minori on the Amalfi Coast. It's an ancient dish, often considered one of the oldest forms of pasta. Ndunderi are similar to gnocchi but are made primarily with ricotta cheese, flour and eggs. This results in a lighter, more delicate dumpling compared to the often potato-based gnocchi found elsewhere.


Ndunderi is celebrated for its rich history and cultural significance in Campania and is protected as a traditional dish. It's a testament to the Italian culinary tradition of using simple, high-quality ingredients to create dishes that are much greater than the sum of their parts.


What to Expect:


Upon arrival at 11am enjoy a curated selection of antipasto paired with a glass of Yves Prosecco of which you can enjoy as we welcome all arrivals to our masterclass and set the stage for an unforgettable day of fun, learning and indulgence.


Following your welcome toast you will embark on a vibrant journey as our illustrious executive chef Malcolm Williams guides you through a hands-on experience where you will how to create these heavenly lemon and ricotta gnocchi with a delicious pork and fennel ragu that is both delicious and will also impress guests when you prepare at home (we'll give you special recipe cards to take with you).


Once you have completed your masterpiece you can enjoy your creation alongside mum accompanied by a fresh a rocket and parmesan salad followed by a signature chocolate cannoli and your choice of barista-made AllPress coffee to finish.


As a bonus, Chef Malcolm has prepared a selection of bonus recipe cards that you can take home that will guide you through some more of his very special Mediterranean favourites.



In Italian culture, like dining, the cooking experience is a social occasion so for this reason we are offering this masterclass for pairs so you can bond with Mum, share some laughs and create more core memories. We do offer the opportunity for groups of 3 people if you have an odd number!

What to wear:


We will provide all of the equipment required to make your ricotta gnocchi and ragu however cooking is not always a clean and tidy process so we advise not to wear your best clothes when attending our classes.

If traveling by public transport, Southern Cross Station is your nearest train hub, situated just a 15-minute walk away. For a more scenic route, hop on trams 96, 109, or 12 from the station and alight at the Casino/MCEC stop 124a. From there, enjoy a picturesque walk along the Yarra.

We can cater for most dietary requirments as long as we are notified in advance. Please outline your requirements at time of booking. Due to the nature of the class, we cannot cater for our vegan friends however we are able to alter the recipe to provide a vegetarian option. Gluten free on request however we regret to inform you that due to the nature of the class, our class is not celiac friendly.
