During Winter Gin Palace be open for lunch, hosting four distilleries across four separate events Patrons will be led down a visceral path of sensory wonderment.

A G&T on arrival will lubricate the welcoming meet and greet with the makers behind the featured gin. This will follow through to a three-course lunch matched with three cocktails. More fun will ensue, where the award winning Trish Brew will walk the group through an interactive cocktail workshop.

Four Pillars Gin

Arguably Australias most well known Gin, the gents at Four Pillars almost need no introduction... but lets give it a crack.

The founders of Four Pillars (three bald pillars: Stu, Matt and Cam) have always loved gin and cocktails. And Cam and Stu have worked in wine for more years than they’d care to remember. They bagan with a clear vision, to elevate the craft of distilling in Australia and celebrate the art of cocktail making.

Their drive to create Four Pillars can be summed up as follows: They love great drinks, they love cocktails, and they love craft.


Matt Wilkinson

Matt Wilkinson hails from the rolling pastures and industrial jungle of Barnsley, South Yorkshire in the North of England – a stealthily disguised ‘centre gastronomique.’

Charming and ever-so-modest, Matt’s foodie muscles were carved under Michelin-starred chef Martin Wishart before arriving in Australia where he worked at Vue de monde and Circa.

Matt is chef and owner of Melbourne eatery Pope Joan formerly in East Brunswick, now residing at 45 Collins street, Melbourne city under the Sofitel Hotel: a casually distinctive all day eatery, replete with wine bar and kitchen garden- a firm favourite since opening its doors in 2010.

Matt is a regular contributor to delicious. magazine and the author of three top-selling cookbooks: Mr Wilkinson’s “Favourite Vegetables”, Mr Wilkinson’s “Simply Dressed Salads” and Mr & Mrs Wilkinson’s “How it is at Home”, which is co-written with his wife Sharlee Gibb. They have sold over 150,000 copies worldwide, with “Favourite vegetables” being translated into nine languages. Matt is currently working on his fourth book due to be released in 2020.

Matt’s very poorly-concealed obsession is with growing, sourcing and presenting the best tasting produce he can – he’s kinda coocoo about it actually. Matt appreciates the importance of farmers and food producers to making his gastronomic plans a reality so it is fitting that he is a former ambassador for the Victorian Farmers’ Markets Association.
