Chocolate Workshop

When Loh Lik Peng, founder and owner of Unlisted Collection: was introduced to a heritage site at the top of Chippendale’s Kensington Street back in 2011, it was both love at first sight and the beginning of a puzzling project. Fast-forward four years, and what is set to be Sydney’s finest boutique design hotel is officially open for business. Two iconic heritage-listed buildings – the former Clare Hotel pub and the Carlton & United Breweries Administration Building have been carefully adjoined by a glass link-way under the engineered expertise of Tonkin Zulaikha Greer Architects. The result: a distinctive and unique design-led property constructed with obsessive attention to aesthetics and a focus on retaining as many interesting and original features as possible.

The Old Clare Hotel

Being a sweet tooth herself, Old Clare believes in eating whatever you please, whenever you please. Let's not even get started on holidays that revolve around chocolate...
Collaborating with Kakawa to bring you a sweet Easter Monday on 17th April.  Expect an interactive chocolate workshop with tempering demonstration, bean to bar talk, tastings and make your own Swiss-style truffles.  Need we say more? 
To top it up we're including a drink from our beverage menu, hoping you'll spend the better part of your afternoon in good company.  
Details: The workshop will go on for 2 hours, 1:30pm-3:30pm. Ticket includes all materials and equipment, plus a drink to enjoy during or after the class. Basically you just need to bring your glowing personality.  
About Kakawa:  Jin Sun Kim is a cool, charm chocolatier and pastry chef who, with partner David Ralph, has made chocolate into an art form.
