Description

So, you want to head into the world of specialty coffee as a Barista but not sure where to start? Enters - Barista Boot Camp.

Fast track your training needs with this intensive 2-day program designed to train skills, knowledge and job-ready coaching arming you for your goal into coffee.

Objectives:

A commitment paired with classroom, hands-on activities and group work will allow you to try, test and clarify the skills to work as a Barista in specialty coffee.

Day 1:

  1. Understand the journey of coffee as a raw product from various origins and how these steps involved impact the flavour or coffee.

  2. Understanding the numbers and the common variables producing espresso for milk and black coffees and how to manage them.

  3. Understand the relationship between strength and extraction and the impact and value of brew ratios.

  4. Dialling in your house-blend recipe using Robur Mazzer grinder and tasting your way to success of replicating quality house-blend espresso.

  5. Texturing milk using a 2-step technique, good for pouring and integrating into a crema.

Day 2:

  1. Further practice dialling in your house-blend recipe using Robur Mazzer grinder and mil texturing presenting a finished product.
  2. Awareness of a cafe coffee menu and how to manage common variations for customer requirements.
  3. Use the refractometer to analytically measure an espresso TDS % and chemistry formula to identify the extraction yield % to determine if the ratio is producing an ideal espresso extraction with taste profile and numbers referring to extraction % chart.
  4. Dialling in espresso using a variety of single coffee offerings using an EK Mahlkonig grinder and various brew ratios to achieve good in the cup.
  5. Following a ‘café closing checklist’, how to and hands on cleaning and maintaining espresso machine and grinders.

The following course is suitable for people currently employed, or interested in becoming employed in specialty coffee. All attendees who have completed Barista Boot Camp will be put forward as ‘trained’ to our network of cafe owners currently seeking a new Barista.

Barista Boot Camp is delivered regularly at our Collingwood Coffee College located on the upper level at Aunty Peg’s Coffee Roasters, 200 Wellington Street Collingwood VIC 3066.

$700.00 per person 
includes catering, coffee and each class hosting only 3 spots to ensure maximum time, attention can be given to all.
