A long table. A summer night. Celebrating good food, grown well.

Up on the rooftop, the garden has been busy. Herbs, edible flowers and summer bounty, thriving under the Brisbane sun. So we called on the chefs and sommeliers of the neighbourhood to help us share it.

For one evening, Ada Lane becomes an open-air dining room. With a long table beneath the moonlight and subtropical trees. The menu shaped by the season and what’s been growing above and beyond the hotel.

Chefs will cook with produce from the garden, alongside beef and dairy raised using SeaFeed based on Asparagopsis a native seaweed cultivated by Sea Forest that’s helping to reduce methane emissions in livestock.

What’s included on the night:
A degustation-style dinner with five savoury courses, followed by dessert and cheese to finish. Each course is introduced by the chef or sommelier who created it, with matched wines poured throughout the evening.

Sam Elsom, founder of Sea Forest, will be at the table too. Between courses, he’ll share how regenerative practices like Asparagopsis are changing the way producers care for land and sea.

SK Steak & Oyster, Hellenika, sAme sAme, Bianca, Lobby Bar, Cru Bar, The Standard Market Company and the team at The Calile Hotel are bringing their best to the table. So you’re in good hands.

All profits support the Sea Forest Foundation and its coastal restoration work.
