Summer Spice - a 6-course gastronomic experience, exploring the deep synergies of whisky and spices, with Australia's leading Indian chef: Ajoy Joshi.

A 38-year veteran of the kitchen, master of his craft and the pioneer of Indian cuisine in Australia, chef Ajoy Joshi creates bold and adventurous Indian flavours in his own unique style from industry mainstay Nilgiri’s in Cremorne.

Ajoy cooks some classics from Indian cuisine, but with a twist; this is his way of letting people know that every single Indian dish has many versions, interpretations or avatars and his aim is not to alter but add a bit of himself to the dish which is cooked with all the fursat (genuine patience) and mohabbat (untold love)!!
