Up in Smoke
Fri. 4 November 2016, 6:00 pm – 9:30 pm AEDT
Dan the Man is a self-confessed barbecue addict who, for the past 5 years, has honed his craft under Brooklyn pitmaster Nestor Laracuente. Now, on the first Friday of every month, Dan will light up the smoker and bring Texas-style barbecue to the people of Sydney.
Kicking off on Friday 5 August from 6pm, meat-lovers can head down to The Field at Eastern Suburbs Rugby Club for a night of slow-smoked, Texas-style beef brisket, pulled pork and a rotating selection of meats including beef sausage, pork ribs and chicken wings. As the succulent meats come out of the smoker, they are carved by Dan on the spot and served American-style on trays with classic barbecue sides of mac and cheese, coleslaw, dirty white bread, pickles and jalapenos.
Nestor Laracuente is one of America’s most prominent pitmasters and a king of the “low and slow” smoking technique used in Southern-style barbecue. Dan hunted him down on a trip to the U.S five years ago and has returned annually ever since to learn the ways of the ‘Brooklyn Pit Rat’. The way Nestor sees it, “cooking is science, but barbecue is magic.” The creator of his own range of dry rubs, Nestor will ship his product to Sydney exclusively for Dan’s monthly barbecues.
Of his love for barbecue, Dan said “Any opportunity to light fires and stand by a smoker all day, I’m there. Especially in the colder months. We use smoking techniques across many of our Dan The Man Cooking menus, but the chance to dedicate a whole night to slow-cooked smoked meats is something I’ve been dreaming of for years.”
The $35 ticket gives guests a tray of brisket, pulled pork, plus a monthly rotating meat, accompanied by sides of mac and cheese, coleslaw, dirty white bread, bourbon pickled pickles and jalapenos. Please note the photo is for visual effect, the actual quantity served is based on a generous portion for 1 person.
The bar will be open from 12 noon serving up Jim Barry wines and Sydney Brewery beers and ciders.
