Unlock the Secret of Authentic Sicilian Passata
Step into the heart of Sicily, under the vines at Kato’s @ 3000, Swan Valley, for a rare, hands-on cooking experience taking place for the first time in Perth’s Swan Valley, with Concetta Sultan, co-author of Cugini in Cucina cookbook.
Together, we’ll experience the time-honoured family tradition of crafting authentic Sicilian passata (tomato purée), the soul of Italian cuisine, in an immersive and memorable culinary journey.
Experience the Day
Journey into Tradition:
I’ll share the cultural and culinary heritage of Sicilian passata, passed down through generations of my family, and invite you into a tradition that has always been at the heart of our table.
Hands-On Processing:
You’ll roll up your sleeves and craft passata from scratch, no experience needed and lots of fun! Everything is provided, so you can simply enjoy the process. You’ll take home your own jars and my time-honoured family recipe, ready to start your own tradition.
Masterful Guidance:
I’ll guide you through choosing beautiful seasonal tomatoes, blending fresh herbs, and preserving passata using authentic Sicilian methods, just as we’ve always done.
Savour the Flavours:
Together, we’ll sit down and taste the passata you’ve made, alongside Sicilian-inspired dishes - fresh homemade antipasti, a comforting plate of pasta, seasonal delights, and a glass of wine, all enjoyed under the Folly of vines at Kato’s @ 3000.
Photo Memories:
We’ll capture the day with a photo collage of your experience, a keepsake to remember this special moment around the table.
Special Location
We’ll gather amongst the vines at Kato’s @ 3000, a place I love for its beautiful table grapes, seasonal produce, and the family who make it all come to life. You’ll have time to wander the vines, try Kato's delicious grapes, slow down, and soak in the atmosphere of this special Swan Valley destination.
Carefully Sourced & Seasonal:
All produce has been carefully sourced from the Vergone's Sicilian family farm in Dwellingup, bringing authentic seasonal flavours to this workshop, part of Concetta’s Seasonal Sicilian Cooking Series.
(Vergones has been selected for its quality and Sicilian authenticity.)
