The Spelendor of Spring is brought to you by this years Nestle Golden Chef's Hat Award winners Billy Fox and Mat Wills. The three course menu with paired wines will showcase not only the cullinary tallents of these two chefs, but also the best of fresh local produce.

Menu:

Amuse: Jim Wild Oyster, roe, buttermilk split dressing, local herbs
Entree: Confit of Tasmanian ocean trout, yuzu, rice, coastal greens, raddish variation
Main: Duo of spring lamb, pea tart, orange and maple carrot, sousbise, beet, lamb jus
Pre-Dessert: Burnt orange, rosemary and gin marshmallow with green ants
Dessert: 'Milk & Honey' - Whipped cheesecake, honey textures, puffed grains, oat crumb, black berries, lemon balm, borage, milk skin
