BE PART OF AN EXCEPTIONAL EXPERIENCE WITH SOME OF THE MOST INFLUENTIAL CULINARY MINDS WORKING WITH COOKERY STUDENTS, SHOWCASING TASMANIAN PRODUCE

In its third year, the Great Chefs Series is a collaboration led by the Northern Tasmanian tourism and hospitality industry, Tourism Northern Tasmania (TNT) and TasTAFE Drysdale, in providing innovative teaching and learning opportunities for cookery and kitchen operations students in an industry setting.

The Great Chefs Series is a project which brings to Tasmania, global food innovators and chefs to work alongside students and teachers from TasTAFE Drysdale to deliver a series of teaching and learning experiences.

The Great Chefs Series is an opportunity for some of the most influential culinary minds on the planet to mentor, coach and collaborate with the developing talent within the Tasmanian hospitality industry and TasTAFE Drysdale using Tasmanian produce.

Between the months of May to October, Josef Chromy Restaurant and Cellar will host a series of public events, whereby cookery students will work alongside visiting guest chefs in developing and delivering a seven (7) course degustation, matched with some of finest cool climate wines from Josef Chromy.


BIOGRAPHY OF PHIL WOOD

Phil Wood is the Culinary Director at Pt Leo Estate on Victoria's Mornington Peninsula. Phil’s food philosophy is centred around balanced, deliberate food that highlights the flavours naturally present in the produce. He is passionate about working with farmers and providers to create food that uses the very best locally sourced ingredients.

Born in New Zealand, Phil won the Josephine Pignolet Award for best young chef at the 2007 Sydney Morning Herald Good Food Guide awards while he was junior sous chef at Tetsuya's Restaurant. This gave him the opportunity to take on the role of chef de partie at Thomas Keller's The French Laundry in the Napa Valley in 2007.

Wood returned to Sydney and joined Rockpool est. 1989 as Head Chef in March 2009 before his appointment as Executive Chef in 2010. From 2012, he was awarded three chef’s hats by the Sydney Morning Herald Good Food Guide. Rockpool est. 1989 was also awarded three stars by Australian Gourmet Traveller and in 2016, it was named the magazine’s Restaurant of the Year.

Phil Wood's creativity, leadership and unwavering dedication have made him one of the country's most exciting chefs.
