Professor Hilton Deeth's Bio
Professor Deeth is a leading researcher and teacher in the fields of dairy science and technology including thermal processing, particularly UHT processing, and non-thermal technologies. His expertise is of value to the development of new dairy product concepts; unravelling the quality aspects of milk, milk powders, and yogurt - including lipolysis & proteolysis; and proteomic analysis of milk and milk powders.
Recent research outcomes/outputs include development of new calcium-enriched dairy products and mineral-enriched UHT milks, determination of changes that occur in milk powders and UHT milk during storage, a detailed study of foaming of milk, determination of the causes of some quality defects in yogurt, and ways of analysing and improving the flavour of UHT milk.
Professor’s Deeth’s role also involves the provision of advice and training to the dairy industry. His consultancy work in this area has included training in UHT processing and troubleshooting quality problems. Prior to his current role with the School of Agriculture and Food Sciences, Professor Deeth was the Director of the UHT Centre at the University of Queensland 1996 – 2007 and Manager, Food Research and Development at Queensland Department of Primary Industries 1991 – 1994.
