Talented chef and also part of the Herbie’s family, Kate Hemphill is incredibly passionate about seafood and has an amazing repertoire of recipes, some of which, she would like to share with you. Today Kate will show you how to prepare a spectacular array of seafood that includes a good variety of techniques that you will be able to then use at home.

Each dish chosen for today has a delicate balance of flavours that Kate will also educate you on creating yourself. Complete today’s course with a chilled glass of wine and a sit-down feast of what you have prepared

Beetroot cured ocean trout

Salt & pepper squid

Mexican kingfish ceviche
