William Angliss Institute Sydney would like to invite you to attend a degustation style lunch menu prepared and served by Cert IV Cookery, Patisserie and Diploma of Hospitality students in our training restaurant, Restaurant Rubric.
This degustation style menu menu showcases a range of exciting culinary techniques in the preparation of various dishes.
There are three options sets to select from for each week
*Please note all guests dining together must select the same course menu option*
Two-Course Option Set | $ 22pp
Chef’s selections of freshly baked bread
Beef sirloin, bone marrow, salt roasted beets, carrot puree
Sticky date pudding, butterscotch sauce, honeycomb ginger spice ice-cream
Three-Course Option Set | $ 38pp
Chef’s selections of freshly baked bread
Lamb back strap with herb crumb on raw vegetable salad
Pan seared salmon, chive, lemon, chili butter, caper berries and tomato salad
Chocolate mousse , raspberry jelly, hazelnut
Five-Course Option Set | $ 58pp
Chef’s selections of freshly baked bread
Onion tartlet with goats cheese and thyme leaves
Native thyme and pepper berry chicken salad, lemon myrtle aioli
Salad of octopus, squid with mussel sauce
Beef sirloin, bone marrow, salt roasted beets, carrot puree
Lemon meringue tart, summer berries, strawberry sorbet

A wine pairing suggestion is also available for each course for an additional charge.
