William Angliss Institute Sydney would like to invite you to attend a degustation style dinner menu prepared and served by Cert IV Cookery, Patisserie and Diploma Hospitality students in our training restaurant, Restaurant Rubric.
This degustation style menu menu showcases a range of exciting culinary techniques in the preparation of various dishes.
There are three options sets to select from for each week
*Please note all guests dining together must select the same course menu option*
Two-Course Option Set | $ 22pp
Chef’s selection of freshly baked bread
Lamb shoulder, braised lentils, beetroot jus, smoked eggplant
Sticky date pudding, butterscotch sauce, gingerbread ice-cream, honeycomb
Three-Course Option Set | $ 38pp
Chef’s selection of freshly baked bread
Native thyme and pepper berry chicken salad, lemon myrtle aioli
Pork belly, pork and fennel sausage, apple puree, pigs ears
Chocolate mousse with raspberry jelly
Five-Course Option Set | $ 58pp
Chef’s selection of freshly baked bread
Quail sausage with black truffle and cherries wrapped in prosciutto
Beef Tataki, ponzu dressing, pickled mushrooms, wakame
Pan seared salmon, chive, lemon, chili butter, caper berries
and tomato salad
Confit duck leg, fried herb kipflers, eshallots, apple balsamic, watercress
Mango parfait, white chocolate soil, passionfruit curd

A wine pairing suggestion is also available for each course for an additional charge.

Located in the heart of Alexandria, a food-lover's playground, the campus is a short walk from Green Square station.
