William Angliss Institute Sydney would like to invite you to attend a degustation style dinner menu prepared and served by Cert IV Cookery, Patisserie and Diploma of Hospitality students in our training restaurant, Restaurant Rubric.
This degustation style menu menu showcases a range of exciting culinary techniques in the preparation of various dishes.
There are three options sets to select from for each week
The table is advised to select the one degustation option set for each booking to ensure smooth service
Two-Course Option Set | $ 20pp
Beef sirloin, bone marrow, salt roasted beets, carrot puree
Sticky date pudding, butterscotch sauce, gingerbread ice-cream, honeycomb
Three-Course Option Set | $ 36pp
Lamb back strap with herb crumb on raw vegetable salad
Pan seared salmon, chive, lemon, chili butter, caper berries and tomato salad
Chocolate mousse with raspberry jelly
Five-Course Option Set | $ 56pp
Onion tartlet with goats cheese and thyme leaves
Native thyme and pepper berry chicken salad, lemon myrtle aioli
Salad of octopus, squid with mussel sauce
Beef sirloin, bone marrow, salt roasted beets, carrot puree
Lemon meringue tart, stewed fruits, strawberry sorbet, crumb
Please note there are vegetarian options available.
A wine pairing suggestion is also available for each course for an additional charge.
Located in the heart of Alexandria, a food-lover's playground, the campus is a short walk from Green Square station.
Time: Sitting at 6pm, 6:15pm or 6:30pm
