Description

Coffee roasting is a unique blend of science and intuition. The challenge for every roaster is to develop a roasting methodology of their own, picking through the stories, science, and sensory information to define coffee roasting - with all of its nuance, mystery and intuition - for themselves.

This one-day intensive course sets up a framework for beginner roasters to develop their skills, abilities and knowledge independently under the instruction of our Director of Coffee. Divided into two parts, the course is grounded in theory but contains a number of practical and hands-on elements where roasting theory and methodology are put into practice.

Beginning with an introduction to sourcing, selecting and processing of green coffee, a green grading exercise will be carried out whereby the defects and quality of the coffee is assessed. The latter half of the course is devoted to planning and executing roasts on a sample and production roaster. This is followed by a cupping of the roast samples to analyse and practise quality control (QC) under the guidance of our Q-Graders.

The equipment featured during the course includes our Proaster sample roaster and customised 15kg Probat located in our Brunswick East Cafe and Roastery. Attendees will take home a bag of their own freshly roasted coffee and the comprehensive Padre Roaster’s Manual.
