From Pub to Bourke Street Dining

Mike Patrick, Executive Chef, Fancy Hank's

Having worked in the industry for the last 20 years, executive Chef Mike Patrick has gained a reputation for being an expert in ‘cooking with fire’. First honing his skills with fire as head chef at Ladro for five years, he then moved to San Telmo cooking traditional Argentinian asado (barbecue) on a ‘parilla’ (grill) before joining his old friend Kent Bell with their new venture Fancy Hanks.

What started out as a mobile service, grew into an establishment at the Mercat Hotel, and then to what we now know as Fancy Hank’s on Bourke Street.
Fancy Hank’s involvement in a multitude of food events that have seen Patrick become one of the most renowned pit masters in Australia.

Mo Wyse is a Seattle and NY expat. She studied journalism, has a background in production but dedicated her passion for creative, plant-based food to creating Smith & Daughters, where she is the logistical, front-of-house and marketing brains behind this gun team.
