Join us for the opening of One Cup at a Time, a studio exhibition showcasing design proposals for a sustainable cafe culture by RMIT Master of Design Innovation and Technology students. Studio leader Dianne McGrath will be opening the exhibition with a free public lecture, sharing how the students tackled issues around packaging, food waste and community engagement.

Coffee is ubiquitous in Melbourne, yet the sustainable future of cafes may be questionable when considering packaging, food waste, and ethically sourced food, amongst other issues. Following an intensive design research studio led by Dianne McGrath, the One Cup at a Time exhibition will present a collection of six student projects that seek to provide resolutions to some of these issues and enable a sustainable cafe culture through a systems-based approach. Design proposals are based on cafe sites around Victoria Harbour, Docklands and range from redesigned coffee cups and waste bin systems, to urban gardens and community based enterprise.



Dianne McGrath is the Director of the sustainability and business consultancy Food for Thought Consulting Australia, and is leading the team behind the RMIT University food waste research project, Watch My Waste - a national hospitality sector food waste research project, and Dianne’s PhD. Dianne chaired the Australian Government’s Retail and Food Service Advisory Group – providing valuable input into Australia’s first National Food Waste Strategy; as well as advising on, and appearing in, the 2018 season of ABC’s ‘War on Waste’. She is also a Board Director with the Open Food Network, a not-for-profit organisation in the food security and food sustainability arenas.

The Exchange at Knowledge Market is an innovative research project space curated by RMIT University in collaboration with Lendlease. Embedded within the Victoria Harbour precinct of Docklands, researchers are exploring the concept of community and new ways of understanding the shared urban environment through a series of workshops, exhibitions, forums and community events.
