Hosted by food specialist and Managing Director of thefoodmakers, Jeremy Ryland and drawing on the experience from Chef Ryan Squires (Esquire) and Chef Josh Lopez (QAGOMA), this discussion will explore Brisbane’s culinary landscape and how to stand out from the crowd in the area.

About the Panel

Ryan Squires
Born on the Gold Coast, Ryan Squires has worked in some of the finest kitchens in the world, including El Bulli in Spain and Per Se in NYC.

After completing his apprenticeship in Sydney Australia, Squires took his experience to the road and opened his first venture with four international friends in Marbello, Spain. His talent has taken him all over the world including London, Denmark and the USA. He now creates inventive dining experiences as the Chef and Owner of Esquire and esq. in Brisbane.

Josh Lopez
Born in El Salvador and raised in Brisbane, Josue (Josh) Lopez has worked in some of Brisbane and Europe’s most acclaimed restaurants. As Executive Chef at the Queensland Art Gallery | Gallery of Modern Art (QAGOMA), he combines cuisine and art with a philosophy that encompasses all that is fresh, contemporary and local. He leads a dedicated brigade of chefs to deliver creative, modern menus for three venues and all events at Gallery.

He was previously head chef at iconic Brisbane restaurants Moda, Two Small Roons and Spring, and in 2011, he spent three months working under René Redzepi at Copenhagen’s noma – repeatedly named the best restaurant in the world.
