Description

The Padre Masterclass Series is a set of classes designed as an all encompassing sensory training experience. The Masterclasses are ideal for anyone looking to develop their sensory skill set, coffee knowledge or considering sitting the Q-Arabica exam.

Each Masterclass draws upon an element from the Q-Grading course and is hosted by our qualified Q-Grader and trainer Chrissy. The exercises within each class are modelled to the specifications and protocols as outlined by the Coffee Quality Institute and Specialty Coffee Association of America.

Organic Acids

Organic acids occur naturally in coffee. Whether they are brought about during the plant's development, processing, roasting or extraction, the acids will influence the properties and flavour in the cup. Furthermore, the presence of acids that a taster is able to detect in the cup can lend an understanding in accurately defining the acidity of a coffee and how it has developed (or did not develop) correctly.

In this masterclass, we will be cupping and identifying five different organic acids used in the Q-Grader exams and learning to recognise their different properties. Participants will be challenged to correctly select and identify pairs of acid-spiked cups of brewed coffee.
