Jaclyn is quite literally the chef who has her cake and eats it too: albeit one she made herself at 5am this morning before the rest of the family woke up.

Jaclyn is the mastermind behind the to-die-for desserts at Icebergs Dining Room & Bar, Bondi and The Dolphin Hotel, Surry Hills.

Jaclyn‘s peerless culinary pedigree includes stints at Moran’s, The Light Brigade, Bistro Moncur, Circa the Prince and Becasse.

Jaclyn credits her long list of mentors (most notably Phillip Sibley, Damien Pignolet and Justin North) for the organic development of her passion and particularly her deep respect for the natural ingredients she uses to create the desserts that have made her famous.

Jaclyn’s delicious vision for innovation and elevation has seen her reinvent the Italian classics and her devoted followers dream of next divine dolce at one of her venues.

Jaclyn will divulge the secrets to her Salted Caramel & Lime Mousse with Almonds and Raspberries, along with all the tips and tricks for recreating this at home to the awe/wonderment/amazement of your guests.
