Italian Culinary Masterclass with Italian Native Chef Matteo Carboni

Rated one of Australia's top cooking schools by Travel Insider in 2016, Casa Carboni was founded in 2012 and offers a 360-degree Italian culinary experience. This masterclass, preparing and cooking a five-course lunch, is a unique opportunity to spend a day in the kitchen with Matteo, and at the table. It showcases the beautiful produce discovered at the markets and farm gates of the Barossa where Matteo migrated to from Italy. Both co-founders Matteo and Fiona Carboni will host the lunch and offer hand-selected wines direct from Italy. A recipe guide from the day's class is included.

The food Matteo is craving as soon as he arrives at Bologna Airport! The street food of Emilia Romagna is this delicious flat bread served with anything from Prosciutto, fresh cheese and rocket to Nutella! In this class Matteo will be preparing platters filled with the last of this seasons tomatoes, beautiful salad leaves from the Barossa Farmers Market and cheeses from our neighbours at Barossa Cheese Company.
Tortino di Patate con Fonduta di Formaggio
A very versatile starter for any dinner party, this flan will be made with local potatoes, Jersey Fresh cream, farm Eggs & Parmigiano Reggiano and served with a cheese fondue made with Barossa Cheese La Dame (aged goat cheese) and white truffle oil.
Cappelletti in Brodo
This pasta dish is at the heart of everyone coming from the region of Emilia Romagna, little popes hats filled with ground "The Dairyman" Heritage free range Berkshire pork and Parmigiano Reggiano, served in a delicate broth.
Potato Gnocchi con Ragu' alla Bolognese
Delicate pillows of gnocchi made with local potatoes, farm eggs and Laucke flour, served with the traditional Ragu' "alla Bolognese".
Mousse al Caffe' con Tuile al Arancia
A delicious espresso coffee mousse served with a tuile flavoured delicately with orange zest.
Each course will be paired with one of our hand selected European wines imported directly by Casa Carboni when we return to Europe each winter.
