Topic: Turning A Passion Into Reality: Female-Founded Hospitality Start Ups

Welcome to the village and enjoy a Sri Lankan breakfast this International Woman’s Day at INDU. Join us as we co-host a brand new event to honour woman internationally working in the hospitality sector. Get ready to celebrate this important day with our partners Women In Hospitality and Palmera.

In this village style breakfast created by Group Executive Chef Amanda Fuller, guests will be able to hear from four inspiring women as we focus on Turning Your Passion Into A Reality: Female-Founded Hospitality Start Ups.


Christine Manfield – Chef, Author & Gastronomic Traveller

Hear from one of Australia’s most celebrated chefs Christine Manfield. A curious cook, a perfectionist inspired by the culinary melting pot of global flavours and textures, and a writer whose successful, award winning books – Tasting India, A Personal Guide to India and Bhutan, Dessert Divas, Fire, Spice, Stir, Paramount Cooking and Paramount Desserts have spiced up the lives of keen cooks everywhere.

As one of Australia’s leading culinary ambassadors, her professional culinary life as restaurateur culminated in three award winning restaurants: Paramount in Sydney 1993 to 2000, East@West in London 2003 to 2005 and Universal 2007 to 2013. She continues to collaborate with chefs and industry colleagues hosting pop up events in Australia and overseas.

An inveterate traveller, Christine hosts bespoke culinary adventures to exotic destinations including India, Italy, South America, Mexico, Bhutan, France, SE Asia, Spain and Morocco.

Christine hosts regular pop up events in Australia and overseas, is a national judge for Delicious Produce Awards, a mentor for Women In Hospitality (WOHO) and consulting ambassador to Pearl Catering.

Tawnya Bahr – Food Consultant, Founder & Director of Straight To The Source

Tawnya Bahr is a culinary entrepreneur with expertise covering many disciplines throughout her 21 years in the food industry, making her one of the leading food consultants in the country.

A gastronomic adventurer and food curator, Tawnya’s love for food and cooking extends beyond the kitchen to production and agriculture. As a consultant, chef, and founding partner of bespoke food tour company Straight To The Source, she uses her culinary experience as a platform for promoting and supporting sustainable practices and local producers.

Winner of the 2017 TAFE Award of Excellence for Innovation and Entrepreneurship, Tawnya is a believer in lifelong learning and frequently imparts her knowledge with the community. A Le Cordon Bleu trained chef, she is currently also completing her Masters of Gastronomic Tourism. She is a regional food and bakery judge with the Royal Agricultural Society, professional restaurant reviewer and a current committee member of the Australian Culinary Federation.

Abarna Raj – Founder and CEO of Palmera

Be inspired by Abarna Raj, the passionate CEO of Palmera. Palmera projects were created to connect women in villages, to markets working with the poor to overcome the obstacles that stand between them and a decent income. For these families, earning a decent income can change everything. It means children can access nutritious food, health care, clean water and go to school. But most importantly, an income gives a family freedom to fulfil their basic needs and meet their dreams with dignity.

Today 2.5 billion of the world’s poor live off the land. They produce up to 80% of the food supply in Asia and sub-Sahara Africa. They feed the world, yet they struggle to feed themselves, because of a variety of challenges and disadvantages. This means that their profits are often minimal and their livelihoods are vulnerable.

Having experienced the 2004 boxing day tsunami first hand, she began a volunteer network that eventually led to her leaving the corporate world and dedicating her days to ending poverty through rural entrepreneurship & innovation.

Chrissy Flanagan – Founder of Chrissy’s Cuts / The Sausage Factory

Enjoy the story of Chrissy Flanagan is a high-profile member of the “Maker Generation” – a growing body of motivated inner-city 30-somethings who’ve quit well-paid jobs to become artisan producers and craftspeople. Launching in November 2015, Chrissy’s Cuts sausages quickly gained cult status via appearances at food festivals and markets, and were soon snapped up by restaurants, gastro pubs and independent supermarkets and cemented Chrissy’s already flourishing media image as the “Sausage Queen.” Chrissy became a brand ambassador for Everdure by Heston barbecues, and started showcasing Smeg Australia appliances in her sausage-making workshops, food festivals and TV appearances – both retro-styled products in keeping with her distinctive style.

In June 2017, Chrissy and Jim made their debut as restaurateurs, opening The Sausage Factory in Sydney’s Dulwich Hill – a bistro, bar and Australia’s only sausage “cellar door”, offering a full menu of sausages made on the premises.
