Giovanni Pilu will explain how to make Bottarga and then demonstrate how to use and plate with this ancient Sicilian ingredient.

Pilu Bottarga is 100% Australian, A Grade and produced by Giovanni Pilu and Southern Fresh Seafood – working together in the Sardinian tradition.

Produced from the roe of mullet fished off the coast of Northern NSW and Queensland - simply salted with a secret blend of Olsson’s Sea Salt, pressed and air dried.

Pilu Bottarga is delicious grated over pasta, shaved over salad or on its own with crusty bread and butter and glass of white wine.

Wine pairing included.
