Are you looking for inspiration and support to help you improve your businesses Food Waste footprint?


Food waste is an ongoing challenge facing food service businesses across Australia. The Federal Government has provided Food Innovation Australia Limited (FIAL) with the opportunity to develop an implementation plan for the National Food Waste Strategy.

To celebrate this step towards collective action in order to halve Australia's food waste by 2030, food service, agribusinesses, and food manufacturers are invited to attend the Food Waste Forum. FIAL will be inviting industry representatives and case studies to discuss all things food waste!

A first at Fine Food Australia, we look forward to welcoming you to what will be a stimulating and insightful event. You are warmly invited to continue the conversation and networking after the presentations.

About the Speakers:

Kruno Velican, Executive Chef, Hilton Sydney Hotel

Born in Zagreb, Croatia where Kruno completed his studies at Zagreb school for Catering & hospitality. The proudest moment in his career was in 1999 when he was a part of the national culinary team during the general assembly of the United Nations in New York City, cooking for world leaders and dignitaries was a very memorable experience.

In the year 2001, Kruno came to Australia to further expand his knowledge and fulfill his dream to lead a culinary brigade in a five-star Hotel environment.

Joshua Bishop - Head of Sustainable Food, WWF Australia

Josh and the food team at WWF-Australia work to promote more sustainable production and sourcing of high-environmental-impact foods, especially beef and sugarcane as well as seafood (both farmed and wild-caught). Josh and the team also work on reducing food waste and raising awareness of the sustainability of our food choices.

Before joining WWF, Josh directed work on economics at the International Union for Conservation of Nature (IUCN), based in Switzerland, and at the International Institute for Environment and Development (IIED), in London. Before that, he worked in West Africa as a free-lance consultant, as a rural extension officer, and as a volunteer with the US Peace Corps in Mali.

Josh holds degrees from Yale, Harvard, and University College London.

Sarah Pennell - Foodbank Australia, General Manager & Company Secretary

Sarah joined Foodbank Australia in October 2010 and since then has fulfilled a variety of roles as the organisation has grown including general operations, marketing and fundraising.

She came to Foodbank from a long career in the food industry focussing on supporting and promoting primary producers and their products. She was General Manager – Professional Services at Horticulture Australia (now Horticulture Innovations Australia), responsible for the team overseeing the delivery of a $70m annual R&D and marketing program for the fresh produce and nursery & garden industries.

Dr Steve Lapidge - CEO, Fight Food Waste CRC

Dr Steve Lapidge is the inaugural CEO of the Fight Food Waste Cooperative Research Centre and a Non-executive Director of the Australian Institute of Food Science & Technology. He was previously the Director of the Food Safety & Innovation within SARDI. Steve's qualifications include a PhD, MBA and GAICD and he is a Fulbright Professional Fellow.

Genevieve Bateman, General Manager of Food Sustainability, FIAL

Genevieve Bateman is the General Manager of Food Sustainability at Food Innovation Australia Ltd (FIAL). Joining FIAL in March this year, Genevieve’s role is to deliver the Implementation Plan for the Australian Government’s National Food Waste Strategy. In addition, she will work across the supply chain to deliver a voluntary committee program that will see Australia deliver on its promise to reduce food waste by 50% by 2030. FIAL is a not-for-profit company that promotes collaboration and innovation across the Food and Agribusiness sector on behalf of the federal Government. Genevieve has over 20 years’ experience working across the food and agribusiness sector in public and private sector organisations
