Opened in 1891, the Mill and the vision of its founder, Frederick Henry Piesse heralded a new era of industry and agriculture in the Great Southern. A two-year collaboration with Michael Patroni, founder of award-winning Spaceagency architects has produced what is now the stunning Premier Mill Hotel. Fervor harnesses locally sourced and native ingredients which are presented in a unique long table degustation. Diners will be treated to many exciting, uniquely Australian ingredients.
