Description

No ingredient seems to capture the current culinary plant-inspired boom quite like aquafaba, the thick, gelatinous by-product of soaked chickpeas. The innovative use of this otherwise throw-away brine was first discovered three years ago through experiments by Frenchman Joel Roëssel and given a name by American Goose Wohlt.

Haute restaurants, bars, and news and media outlets all over the world are catching on to the many and varied uses of aquafaba which has become the silver bullet to making everything from airy meringues to expert whiskey sours.

In this totally hands-on two hour class we will learn how to use aquafaba to create three scrumptious dishes that are fun, easy and inexpensive to make. This class is excellent both for beginner cooks and the more experienced people wanting to add new dishes to their repertoire. The class concludes with a relaxed social lunch.

Cooking benches are shared between two. Fly solo and we'll match you up with a cooking buddy, or book in with a friend, spouse or partner and get a discount on your tickets!

About The Chef:
Pepe Marshall


Our chef for ths class will be the wonderful Pepe Marshall!
Pepe is a plant based chef who runs a catering company in Sydney called Food by Pepe. Originally trained as a classical chef, Pepe more recently has adapted her skills to working solely as a plant-based chef. Having run a successful vegan sushi restaurant she now focuses on compassionate catering, demonstrating that vegan food is both creative and delicious.
