Description

A dining event like no other, set under the stars on Rainforest Bounty's stunning property. The inaugural Diner en Vert, (inspired by the famed Diner en Blanc and created by the team at Rainforest Bounty) will be a celebration of biodiversity and Australian Native Rainforest foods.

Dress in green and celebrate our abundance and biodiversity, whilst dining on a superb degustation by acclaimed chef Paul Iskov and the team at Fervor. The meal will showcase local Tropical North Queensland produce with a curated wine matching by winemaker and sommelier Koen Jansens.

The night will also include music, celebrity guests and speakers on indigenous knowledge, food, wine, wildlife conservation and regenerative agriculture.

Fervor and its chef and owner, Paul Iskov work almost exclusively in food tourism. Their offering is unique to the state they cook in and provides an amazing connection with the regions, native and gourmet food, while educating their guests in stunning and iconic Australian settings. They will of course be spending time foraging with locals in the Tablelands and gathering food from Rainforest Bounty's property with Founder and industry leader, Geraldine McGuire.

Paul is a trained chef originally from Albany on the south coast of Western Australia (WA) and has worked around the world gaining experience in some of its best restaurants such as Noma.

As a unique roaming pop-up restaurant Fervor brings a culinary experience to regional areas, focusing on native Australian and locally sourced ingredients to create an interactive degustation.

The feast provided is not just a culinary journey, it is matched with a cultural experience! The Fervor team works to connect with local indigenous Elders and cultural tour leaders at each location, to gain knowledge and understanding, not only about newly discovered ingredients, but also about the history behind the region. It is an important part of the experience that Fervor passes on by respecting and acknowledging the local indigenous culture. The foods diners are eating have a connection to land stretching back thousands of years. It gives them a greater understanding and appreciation for the food they are enjoying and the importance of the cultural significance in each area.
