Collingwood Coffee College and Proud Mary Kitchen have joined forces to create an innovative 9-hour cooking program, running over 3-weekly sessions. Our inaugural, unique cooking classes arming you with a menu for those special occasions, preparing and cooking top-notch food.

AN AUSSIE CHRISTMAS MENU

Working with Proud Mary’s very own Executive Chef Brook and Pastry Chef Jemima, this badass program will get you ready for Christmas cooking! Happening over 3–sessions we will blend the best practical cooking and sharing food experience. Prepare, cook and enjoy an Aussie seafood BBQ, glaze some ham, roast and stuff pork then top it off with fruit mince pies all round! (Over 3 evenings, dates below)

Delivered over 3-sessions, from scratch you will prepare, then cook , then enjoy an entrée, main meal & dessert;

  • Session 1 - Tuesday 29th August 5.30 -8.30pm - An Aussie BBQ Seafood

  • Session 2 - Tuesday 5th September 5.30 - 8.30pm - Glaze some ham, roast and stuff pork

  • Session 3 - Tuesday 12th September 5.30 - 8.30pm- Fruit mince pies all round!

Cooking up a storm in our first class, production kitchen, this bright creative space is designed to make cooking enjoyable and our program designed to be approachable, replicable at home and downright delicious!

Maxing out at 8 people we include a wide range of recipes and meals for your Christmas Menu practice run.

We provide everything; all you need is your appetite. Come with a group or alone, everyone is welcome!

MEET BROOK

Hailing from New Zealand, Brook’s career started at famed Auckland seafood restaurant Hammerheads and Wellington’s acclaimed Icon restaurant at Te Papa Museum. True to New Zealand’s food philosophy, he was instilled with the importance of fresh, seasonal produce. After leaving New Zealand in 2002, Brook’s extensive travels saw him take up chef positions at Peter Gordon’s Providores in London, Christine Manfield’s dynamic East West in London and Michelin-starred Public Restaurant in New York. Relocating to Melbourne in 2010, Brook worked at The Commoner and Auction Rooms before taking on the Executive Chef role at Proud Mary Cafe earlier this year.

MEET JEMIMA O’BRIEN

Jemima completed her apprenticeship in Perth and spent years at Bea’s Of Bloomsbury in London where she developed creative, intricate cakes and pastries. Moving back to Melbourne, Jemima worked as the head pastry chef at Auction Rooms for three years before joining Proud Mary Cafe’s Executive Chef Brook Petrie earlier this year. Jemima also runs a successful wedding cake company called Zephyr & Bloom.
