Module 1 (25.03.17) - Vines, Vineyards, On the land: Why site matters and process of fermentation - Ever wondered how winemakers turn a teeny tiny Grape into a Bottle of wine? This course is all about the process of fermentation and why where the grapes come from and how viticulturalists and winemakers decicde when to pick and what grapes to pick.
Module 2 (01.04.17) - Sip, Swirl, Savour' sensory evaluation - We've all been a a dinner party when one guest smells their wine, takes a sip and says it shows 'hints of raspberries'? In this module we go through the basics of sensory evaluation and how to ascertain the flavours in wine for yourself and also reveal the mysteries around how the scents get into wine in the first place!
Module 3 (05.04.17) - Food and Wine pairing 101 - In this session we're going to teach you how to be a Sommelier at your next dinner party or lunch with mates. Explaining the ins and outs of food and wine matching and ways you can do it at home.
Module 4 (15.04.17) - Weird and wonderful: A talk in Natural, skin contact, organic and biodynamic wines - Over the last few years we've seen the rise of the term 'Natural' wines, either in restaurants or bottle shops around the country. We're going to show you a bunch of wines that come from either 'natural', 'skin contact', 'organic' or 'biodynamic' vineyard and winemaking practices to show you the differences and what these terms actually mean.

From humble beginnings, her love and understanding of wine grew over many years before deciding she wanted to fully immerse herself in the industry so she could one day write about wine. This led her to become a sommelier so she could have a greater access to all the different styles of wine and develop food and wine matching skills.
She has been the Head Sommelier of restaurants such as Manly Pavilion, 4Fourteen and China Lane is now currentlyconsultingonnumerouslistsinSydneysuchas Museumof Sydney'snewrestaurant 'The Governors Table', Museum of Contemporary Art and the ‘Bar at the End of the Wharf ’ at the Sydney Theatre Company, the newly opened No. 1 Bistro inside the Mint Building to name a few. Samantha also writes about wine regularly for various publications and hosts wine video channel 'How to Drink Wine with Samantha' on The Guardian website. Along with being a finalist for ‘Digital Communicator of the Year’ from the WCA in 2015.
She is also currently the Wine Program Director for Nomad Restaurant in Surry Hills.
