Step into The Vault
Your first wine from The Vault is a
2005 Peregrine Ridge Winemakers Reserve Sparkling Heathcote Shiraz Late Disgorge (Heathcote)
TROPHY & GOLD - Australian Sparkling Wine Show 2011, Class 3, Sparkling Red Wine (Any method of fermentation)
Colour: Dark red to garnet with purple to garnet hue.
Nose: Blackberries, dark cherries and raspberries with hints of yeast and spice.
Palate: Intense lifted blackberries, dark cherries and sweet raspberries dominate the finely textured palate.
The extended time on lees delivers a persistent bead and fine, creamy moose.
Medium to full bodied in the mid palate with a long, dry and persistent after palate.
Right from the start, you’re feasting like royalty! Succulent CRISPY PORT BELLY with CHAR SIU SAUCE, SPRING ONIONS, and SESAME
Straight from The Vault is a
2010 Bass Phillip Gamay (Gippsland, VIC)
Brilliant in color, nose, and taste. Bright red in colour with a tinge of purple on the rim, the nose has light berry aromatics with hints of dried leaves and herbs. The flavours have a liquorice note and the finish is quite substantial without being excessively tannic. Close to Beaujolais.
Next, you savour each sip of a
2013 Turkey Flat Gobble Gobble Shiraz Grenache (Barossa Valley, SA)
A one-of-a-kind experience. Juicy crushed mixed berries, light peppery stalk influence, plenty of perfume and a little cinnamon oak – brightly lit is how it smells – synaesthetes apply within. Medium bodied, all pippy raspberry and spice with fresh crunchy acidity, light but firm tannin control and a meaty red berry finish that’s lively and fairly long. Barossa Nouveau, you might call it. Works well. Very interesting wine.
Luscious flavour that you’ll be talking about for days! BEEF CHEEK braised in a beautiful RED WINE with CELERIAC REMOULADE, MUSHROOM and BACON LARDONS
Your third wine tasting is a fine Shiraz —
2008 Dowie Doole Reserve Shiraz (McLaren Vale, SA)
In a class by itself. Outstanding, super saturated, black crimson red colour with very deep, black crimson hue. The nose is a sniffers delight with a perfumed, aromatic profile of ripe blackberry, liquorice, mocha, dark chocolate, vanilla and confectionary showing superb intensity. Magnificently opulent and rich, the palate delivers explosive flavours of ripe blackberry, liquorice and mocha followed by some vanillin confectionary and spice. Silky smooth, perfectly integrated tannins with very long aftertaste of blackberry, mocha, liquorice and vanillin confectionary.
Then, heighten your experience with
2010 Kellermeister Wild Witch Shiraz (Barossa Valley, SA)
Tasting Notes: Award-winning and high marks.
It has a fragrant nose with spicy black berry fruits. Sweet and intense, raspberry and cassis transform mid-palate to chocolate, leather and spice, with an earthy-truffle-like back palate that lingers, complimented with very fine tannins.
96 Points - James Halliday
Next, every sip is pure indulgence with
2003 Noon Reserve Shiraz (McLaren Vale, SA)
Tasting Notes: Robert Parker 99 points!
Off-the-charts richness as well as an intoxicatingly complex, multidimensional bouquet of smoke, licorice, blackberries, cassis, vanilla, and incense. A huge, sweet, rich, concentrated attack becomes even more impressive with laser-like precision to its full-bodied, super-concentrated style. Boasting good acidity, ripe tannin, and a layered mouthfeel, this stunning Shiraz is the finest I have ever tasted from the Langhorne Creek sector of South Australia. It should drink well for two decades.
As you finish your last bites of your main course, you won’t want to put down our glass of
2003 Rogues Lane Shiraz Malbec (Heathcote, VIC)
Halliday — 94 Points.
"Deep, dense colour; a very similar wine, the juicy malbec subsumed in the ever-so-dense blackberry fruit of the shiraz. The tannins, however, are slightly less robust. Ultimate Parker special."
A perfect end to a perfect meal! CABOT CLOTH BOUND CHEDDER, QUINCE PUREE & CANDIED WALNUTS
Your final wine tastes of the day are rare vintages—
2007 Kooky Village “The Nutter” Shiraz (Barossa Valley, VIC)
A treasure to behold. The Shiraz starts out dark and brooding, quite closed. Rich dark forest fruits and a hint of black olive start out until the 2007 starts to open up with touches of raspberry, cherry, liquorice and spicy plums. Tell-tale stone fruit comes through subtle oak, intertwined with complex red fruits, giving over to a long, well textured finish.
And last but not least —
2008 Battelly Durif (Beechworth, VIC)
90 Points Halliday.
"Deep crimson; a strongly accented bouquet of dark berry fruits leads into a full-bodied palate where succulent fruit and truculent tannins wage war on each other - best stand back for five or so years and let the victor emerge"
That’s 3 courses and 9 Vault-worthy rare and extraordinary wines.
Savoured by 10 of the most fortunate people.
Will you be one of them?
